WELCOME SUMMER!!!

muffins and a movie
This is an easy and delicious blackberry cornbread muffin recipe. I got this from the wonderful Southern Living magazine last summer. The recipe originally used canola oil instead of butter, but I substituted the butter which makes the cornbread have more of a pound-cake flavor, which I loved. Enjoy!:

Yield: Makes 2 dozen muffins

Ingredients

  • 2 cups self-rising white cornmeal
  • 1/2 cup sugar
  • 5 large eggs
  • 1 (16-oz.) container sour cream
  • 1/2 cup melted butter
  • 2 cups fresh blackberries

Preparation

1. Preheat oven to 450°. Stir together cornmeal and sugar in a large bowl; make a well in center of mixture. Whisk together eggs, sour cream, and oil; add to cornmeal mixture, stirring just until dry ingredients are moistened. Fold in blackberries. Coat 2 muffin pans with vegetable cooking spray; spoon batter into muffin pans, filling three-fourths full.

2. Bake at 450° for 15 to 17 minutes or until tops are golden brown. Cool in pan on a wire rack 5 minutes. Remove from pan to wire rack.

One of my favorite movies to watch in the summer is "Come September." It's not a well-known movie, despite a very famous cast including a young Bobby Darrin, Sandra Dee, Gina Lollobrigida and Rock Hudson. Two main reasons I love it: It was filmed in 1961 in Italy, and I especially love Gina Lollobrigida's entire wardrobe in the movie. I first discovered it on Netflix, then ordered the dvd off amazon, but it might be difficult to find otherwise (it's worth the hunt though!).


i so wish women still wore scarves like this! (i've tried multiple times, but it never looks right)
